Should we talk about crepes? Crepes is just one thing that felt missing in my keto diet. Merenga-like crepes from almond flour were not even close to the crepes I love. So, we bought the King Arthur Keto Wheat Flour Blend with the single goal of recreating the keto version of crepes. TL;DR – SUCCESS!
First of all, this flour blend is definitely not a one-to-one substitution for wheat flour, at least not in the crepes recipe. Due to the high amount of fiber, it soaks up more liquid, so you basically have to increase the amount of liquid by 1.5 times. Otherwise, you will end up cooking pancakes! Additionally, due to the low wheat gluten content, the “adhesiveness” of the mix is much lower, so you have to put more eggs into the recipe to keep the end product together.
We are planning to make several more iterations of the recipe, mixing it with wheat gluten and almond flour to improve flavor, texture, and reduce thickness. So, here is the non-vegan gluten-included recipe:

You CAN make a loaf of bread with a bag of this flour, but be sure to mix your yeast with lukewarm water until dissolved first, then incorporate it with the flour and the rest of the ingredients. Mix by hand or machine well, and when you think you’re done, keep mixing until it doesn’t stick to your fingers or surfaces too much. This flour is by far the best on the market for keto recipes.

Keto pizza dough recipe calls for.
